​When you place your order this is the cut sheet we will go over with you.  If there is a certain cut that you do not want you will not lose the meat, it will be ground into extra hamburger.  Beef is sold by the 1/8,1/4,1/2 and whole.  1/8 beef will yield approx. 60# of meat.  20# will be hamburger and the remaining 40# will be roasts, steaks, stew meat and brisket.  1/4 beef will yield approx. 120# of meat.  40# will be hamburger and the remaining will be roasts, steaks, stew meat and brisket.
